THE FAST FISH DISH

We live such busy lives in this world.  We hardly have time to think, talk, play or even relax and spend time with family and friends.  In this issue, I am going to contribute to your time management plans, how to save time in your day working or whatever you have planned and still have a nice dinenr without having to slave over the stove.

Where to start? On your way to work or dropping the kids off to school, stop at the local vege shop and get these things;

Snappy Snapper

Garlic

1 shallot

a stick of lemongrass

some basil

1 red chilli

a knob of fresh ginger

a handful of fresh coriander

two medium sized lemons

a tin of coconut cream

Leave your items somewhere nice and cool at work until you get home.  Now on your way home, stop at the fish shop and pick up a whole snapper about 2 to 2.5kg (ask the fishmonger to clean the fish for you, so much easier).  Then stop at a supermarket or bottle store and pick up your favourite bottle of wine and then home we go.

  • Preheat oven to 200°C, open the bottle of wine and have a glass straight away
  • Take the tin foil out and rip two large sheets enough to wrap your fish in. Place the fish on the foil, rub with salt and pepper and a little olive oil and half of the coconut cream
  •  Take you garlic (however much you want) and the rest of the ingredients out on to a chopping board and chop roughly leaving the ingredients nice and chunky
  • Place all ingredients on top of the snapper and wrap with the foil, making sure to seal around the snapper, place on a roasting tray then pop into the oven for about 20 minutes
  • Turn the oven down to 180°C for a further 10 to 15 minutes, and then have another glass of wine.  By now you should be feeling nice and relaxed.  So my suggestion is either have a shower, sit down and read the paper, get the kids of partner to set the table or make a salad, but dinner . . .Well it's as god as done.
  • Serve with potato salad
  • PS. Be careful when you open the foil.  The steam trapped inside will be very hot.  And the fish is enough to serve 4 people.
